Equipment

  • None

Ingredients

  • 1 teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 1 tablespoon avocado oil
  • 1 pound primal blend ground chicken
  • 8-12 corn tortillas for serving
  • Suggested Toppings:
  • 1 ½ cups shredded cheese
  • ¼ cup sour cream
  • 1 cup diced avocado
  • 1 cup diced tomato if in season
  • 1 cup shredded lettuce
  • ¼ cup fresh cilantro washed and chopped
  • ¼ cup Yucatán Habanero Salsa

Instructions

  • Make the Spice Blend: In a small bowl, combine 1 teaspoon of sea salt, ¼ teaspoon of freshly cracked black pepper, 1 tablespoon onion powder, 1 teaspoon garlic powder, 1 teaspoon smoked paprika and ½ teaspoon ground cumin.
  • Warm the Tortillas First: Heat a large cast iron skillet or nonstick pan on medium low heat. Warm 8-12 tortillas by placing a few in the pan, not touching, and warm on each side for about 30-45 seconds. Place the heated tortillas inside a clean folded towel or tortilla warmer to keep warm.
  • Cook the Chicken: Preheat a large stainless steel or nonstick skillet over high heat and add a tablespoon of avocado oil. If your chicken is juicy, drain it well.
  • Add 1 pound of primal blend ground chicken to your hot pan. Using a straight sided wooden spatula, break up the chunks and allow the chicken to start browning. Once you’ve broken up the chunks, cook for 3 minutes undisturbed, then add the spice blend and mix in well. Reduce the heat and cook for 3-6 more minutes, until the chicken is cooked through and nicely browned. Your chicken should be browned, no pink, and reach a temperature of 165˚F.
  • Assemble the Tacos: Transfer the meat to a serving bowl and serve along with the warmed tortillas and any of the suggested toppings that strike your fancy.
