Macerate the strawberries. Combine ½ cup sliced strawberries, 1 tablespoon maple syrup, pinch of orange zest, 2 tablespoons fresh orange juice, dash of vanilla extract and a pinch of sea salt in a small bowl. Let the strawberries marinate for 5 minutes.
Build the parfait. For the first layer, place a quarter cup of the yogurt in a glass or bowl.
For the second layer, place half of the macerated strawberries on top.
For the third layer, cover the strawberries with a quarter cup of the granola.
Repeat the process by adding a second layer each of yogurt, macerated strawberries and granola.
Serve immediately or refrigerate until desired. It will last in the refrigerator for 24 hours, though the granola will soften over time.
